Ingredients:
- 1/2 1b beef shank
- 1 oz salted mustard greens
- 1 oz dried lily flower and
cloud-ear fungus
- 4 red dates
- 1 garlic clove
- 2 stalks scallions
Sauce
Mix:
- 1 1/2 tbsp oyster flavored
sauce
- 1/2 tsp sugar
- 1/2 tsp premium soy sauce
- a dash of pepper and
sesame oil
- 2 oz water
Thickening:
- 1/2 tsp corn starch
- 1 tbsp water
Seasoning
Mix:
- 1/2 tbsp superior soy
sauce
- 2 tsp corn starch
- 1 tsp water
- 1 1/2 tbsp oil
Procedure:
- Slice beef. Marinate beef
with seasoning mix and set aside.
- Wash and cut salted
mustard greens, mix with 1 tsp sugar. Set aside.
- Rinse and soak fungus and
dried lily flowers till soft. Then drain. Soak red dates
till soft, remove pits, shred red dates.
- Heat wok, add oil,
stir-fry beef, then drain away oil.
- Chop garlic, section
scallions and stir-fry in 1 tbsp oil. Add remaining
ingredients, then beef, and braise for 1/2 hr. Sprinkle
with wine, add sauce mix; lastly thickening and stir
well.
- Serve for 6 persons.
