Ingredients:
- 1 lb chicken
- 6 dried Chinese mushrooms
- 2 stalks scallions
(sectioned)
- 2 slices ginger
- 4 oz bamboo shoots
Sauce
Mix:
- 3 tbsp oyster flavored
sauce
- 1 tsp superior soy sauce
- 1 tsp premium soy sauce
- 1/2 tsp sugar
- 1 cup water
Seasoning
Mix:
- 1/2 tbsp superior soy
sauce
- 1/2 tbsp premium soy sauce
- 1 tsp cooking wine
- pinch of pepper
Procedure:
- Rinse chicken and cut into
big pieces. Marinate chicken with seasoning mix.
- Soak Chinese mushrooms
till soft. Cut into half. Slice bamboo shoots.
- Stir-fry chicken pieces in
hot oil till golden-brown. Drain and set aside.
- Stir-fry scallions and
ginger with 1 tbsp oil. Add Chinese mushrooms, bamboo
shoots and chicken pieces. Pour in sauce mix. Cover and
cook for 5-6 minutes.
- Serve for 4 persons.
