Ingredients:
- 9 oz baby shrimps
(shelled)
- 1/2 cup peas
- 4 tbsp onions (diced)
- 2 tbsp Hoisin sauce
- 2 slices ginger
- 1 clove garlic (crushed)
- 2/3 tsp sugar
Marinade:
- 1/3 egg white
- 1 tsp corn starch
- 1/8 tsp salt
- a pinch of ground white
pepper
Procedure:
- Blanch peas in boiling
water for few seconds. Then soak in cold water. Strain.
Add marinade to baby shrimps and marinate for 1/2 hour.
- Half-cook shrimps in hot
oil. Strain. Heat some oil in a pan, put in first ginger
and garlic. Add shrimps, peas, onion, sugar and Hoisin
sauce, keep stirring. Sprinkle dash of wine just before
serving.
