Ingredients:
- 1 1/2 lb frozen oxtail
- 1/2 lb onions
- 1/2 lb carrots
- 1 stalk scallion (chopped)
- 2 slices ginger
- 3 tbsp ketchup
- 3 1/2 cups water
Seasoning
Mix:
- 2 tbsp oyster flavored
sauce
- 4 tbsp premium soy sauce
- 1 tsp salt
- 4 tbsp sugar
Procedure:
- Defrost oxtail. Boil in
water for 3 minutes, drain well. Cook oxtail in fresh
water with the ginger until tender. Remove oxtail and
reserve cooking liquid.
- Peel and cut carrots into
pieces, stir-fry in oil, then set aside. Peel and slice
onions, and stir-fry in oil.
- Stir-fly scallions and
ketchup with oil, add in oxtail and stir-fry. Put in
other ingredients and seasoning mix. Stir-fry well; then
pour into pot of boiling cooking liquid. Simmer till
sauce is thickened.
- Serve for 4 persons.
