Ingredients:
- 2 1/2 lb chicken
- 2 slices ginger
- 2 stalks scallions
Sauce
Mix:
- 1 tbsp Rose Dew wine
- 1/2 tbsp sugar
- 1 tsp salt
- 3 cups marinade sauce
- 3 cups water
Special
Ingredients:
- 3 tbsp tea leaves
- 1/2 bowl cooked rice
- 1 1/2 piece brown sugar
(grounded)
- 1/2 tbsp Rose Dew wine
Procedure:
- Clean the chicken. Rinse
in hot water. Drain and set aside.
- Heat 1/2 tbsp oil, add in
ginger, scallions and sauce mix. Bring to boil.
- Then put in chicken and
simmer for 1/2 hours, basting chicken frequently with the
sauce. Remove chicken from sauce.
- Place a tin foil sheet in
middle of wok. Add in the special ingredients and cook
till smoke rises. Then place chicken in the middle, smoke
for 7-8 minutes. Brush chicken with some sesame oil.
Ready to serve.
- Serve for 6 persons.
