Ingredients:
- 1 (about 1/2 lb) squid
- 1/2 lb shrimps
- 2 oz ham
- 3 oz celery (remove root,
and wash)
- 1/2 tbsp garlic (crushed)
Seasoning
Mix:
- 1/2 tsp salt
- 1 tsp pepper
- 1 1/2 tsp corn starch
Sauce
Mix:
- 2 tbsp oyster flavored
sauce
- 1 tsp superior soy sauce
- 1 tsp sesame oil
- 1 tsp wine
- 1 tsp sugar
- 1 tsp corn starch
- 1/3 cup water
Procedure:
- Shell, devein and wash
shrimps. Bone, wash and dry squid, slice (2" x
1") and blanch. Add seasonings and marinate for 30
minutes.
- Cut ham and celery into
2" long strips. Prepare sauce.
- Heat 3 tbsp oil in wok.
Saute garlic, add in squid and shrimps, stir-fry for 3
minutes, then add in ham and celery. Mix well. Dish up.
- Heat sauce in wok until
thickens.
- Heat up the iron platter,
add in the fried ingredients. Pour the sauce over before
serving.
